After trying to mimic the mustard dressings in French restaurants for a year, I created a dressing that is easy to make and tastes great. It takes me 5 minutes from start to finish and everyone loves it.
Ingredients:
- 4 or 5 Large Tablespoons of Maille Original Dijon Mustard. Don't use Grey Poupon, it doesn't taste nearly as good. The only substitute for Maille I've found that works is Jack Daniels.
- 3 cloves of fresh garlic.
- Bit of salt.
- 3 Tablespoons of Olive Oil
- 1 large fresh lemon.
Put the olive oil and mustard in and start to mix. Cut the lemon in half and take a fork to squeeze out the juice (fork makes it much easier).
Crush up the fresh garlic and mix in with the salt.
Mix, mix, mix together. Make sure you taste it and add a little more of any of the above ingredients for your taste. Usually enough to cover an extra large salad. Tastes great on mixed baby greens, spinach salad, butter lettuce and broccoli.
You can leave out the mustard and substitute avocado but it becomes significantly higher in fat.
The avocado version is wonderful for dipping fresh artichokes.
For some variety, add a few red pepper flakes or pepper.
