My conversation with my mom got me really inspired to start thinking about how to prepare an "ideal" recipe. My general sense is that the recipe needs to be low in overall points, makes you feel full, gives you some energy and is high in overall nutrient density. And taste great.
Lobster is something many of us find delicious, but it always seems to be served in a cream or butter based manner. The funny thing is that the meat of a lobster is high in many important minerals and vitamins, and there are roughly 80 calories in a 3 oz serving of lobster. So it can be a healthy food, but the way it is commonly served sort of dulls that benefit through the addition of so much fat

calories in lobster make for a great base for a dish and with 17 grams of protein you can check that off. For those who follow a "Zone" type diet, adding carbs in the form of vegetables can taste great. Here is an idea of how to prepare a great lobster salad.
Lobster, Corn And Artichoke Salad- Serve Warm Or Chilled
In New England, Lobster is commonly served with corn on the cob. So one thing you might want to do is experiment making a salad that features both lobster and corn. This can get expensive, but every now and then you can splurge. And this can also be easy. Buy some frozen lobster meat and this does not have to be just tails. Mix it with maybe a can of organic corn, and a can of artichoke hearts. Chop of the artichoke hearts and mix up the lobster, corn and artichoke.
You can then flavor it any way you want- but the rule here is no butter or cream. Maybe take some lemon juice, dijon mustard, olive oil and mix it together. Maybe a touch of avocado to make it more filling. Then serve it warm over rice or chilled over a huge bed of romaine lettuce or whatever green you like.
The greens help to make this recipe nutrient dense, meaning a very high level of important phytochemicals and micronutrients which are associated with good health. I would also like to hear your thoughts on recipes that meet the criteria I outlined above.
